Instructions

  • Take out the bean sprouts and set aside
  • Prepare some bean curd, I like to eat it, but you can leave it alone
  • Lean meat, sliced, the thinner the better, add cornstarch powder, egg white, sesame oil, salt, light soy sauce, white pepper, oyster sauce, and sesame oil, mix well, marinate
  • marinate for 20 minutes
  • ready, ginger and garlic
  • Nodular Dried Chili, Sichuan Green Vine Pepper
  • Put oil in the pot, when the oil temperature is 3 layers hot, add chili peppers, and fry the peppers until fragrant. Why should the temperature not be too high, if the peppers are too high, the paste will not look good, and the peppercorns also need to be sautéed slowly, pay attention to low-heat frying
  • Then put ginger and garlic, the fire should not be too big
  • Add red oil bean paste, and sauté until fragrant
  • Then put water in the pot, wait for the water to boil, and then add the bean curd, cook it for more flavor
  • The important step is to put the meat, pick up the chopsticks, and put it down one by one, it may become a pile of makeup when you pour it in, so take your time.
  • The meat is ready, pour it onto the bean sprouts plate, then pour the minced garlic, and sprinkle some chili powder, if you like a strong flavor, add some pepper powder
  • After the pot is cleaned, pour in an appropriate amount of oil, I pour more because I plan to fry other dishes, so I don't need to pour all of it. The oil temperature is as high as possible, as long as there is no fire, haha, then pour the hot oil into the plate
  • The last step, sprinkle chopped green onion
