Ingredients
- 750 g sea bass(Japanese sea bass or flower cod)
- 2 small dried chili peppers
- 30 g green onion
- 10 g ginger
- 2 tablespoons cooking wine
- 2 teaspoons salt
- 3 teaspoons soy sauce
- 0.5 teaspoon sugar
- a small amount sesame oil
- 30 g vegetable oil
- 2 tablespoons water
Instructions
- Clean the sea bass by descaling and gutting it. Make two shallow cuts on each side of the back. Drizzle with cooking wine and sprinkle some salt. Allow it to marinate for 30 minutes.
- Wash the green onions and cut them into long, thin strips. Slice half of the ginger, and the other half into slices. Cut the small red chili into rings.
- Place a few slices of ginger in a dish.
- Lay the marinated sea bass on top, placing some ginger slices in the fish cavity and garnishing the surface with green onion and ginger strips.
- Steam for about 8 minutes after the water comes to a boil.
- While the fish is steaming, prepare a sauce by mixing light soy sauce, sugar, and sesame oil in clean water.
- Once the fish is done steaming, remove it, discard the steaming water, and remove the green onion and ginger strips. Place fresh green onion and ginger strips along with the small red chili on top of the fish.
- Drizzle the prepared sauce over the fish. Heat the oil in a pan until it smokes, then pour it over the fish.
