  • 750 g sea bass(Japanese sea bass or flower cod)
  • 2 small dried chili peppers
  • 30 g green onion
  • 10 g ginger
  • 2 tablespoons cooking wine
  • 2 teaspoons salt
  • 3 teaspoons soy sauce
  • 0.5 teaspoon sugar
  • a small amount sesame oil
  • 30 g vegetable oil
  • 2 tablespoons water

  • Clean the sea bass by descaling and gutting it. Make two shallow cuts on each side of the back. Drizzle with cooking wine and sprinkle some salt. Allow it to marinate for 30 minutes.
